Yellow Thai Rice



Coloring that’s natural is always best and this recipe gets its name straight from the source: turmeric! This simple rice recipe pairs well with chicken for a complete meal.

For starters this recipe is quick to throw together. Make some rice and sauté some onions then add spices. Done.

Turmeric, known for its anti-inflammatory properties is also a great way to add color to your diet. The bright orangey-yellow of the spice will stain, so be careful when cooking! Combining black pepper and turmeric, makes the active ingredient (curcumin) more bio available (allowing the body to absorb the nutrients better). The spice isn't “hot” - just a thai flavor.

Food is medicine when you make healthy choices and this is one of those.



Coconut milk gives a creamy consistency without the heaviness of dairy and makes this recipe vegan friendly. I love the So Delicious brand. I also use it every day for my smoothies!



Yellow Thai Rice Recipe

Serving Size 4

Ingredients:
1 Cup Brown Rice
½ Cup Onion Chopped
1 Tbsp. EVOO
2 Tbsp. Turmeric
1 tsp. Black Pepper
1 tsp. Fresh Grated Ginger
½ tsp. Red Curry Paste
1 cup Coconut Milk, un-sweetened

Directions:
Cook rice, as directed on package. Meanwhile in a medium sauce pan, add 1 TSB EVOO and onions to sautee. Cook the onions for 5-10 minutes or until clear. When rice is done, add turmeric, black pepper, ginger, red curry paste and coconut milk to the rice pot and turn heat on low. Simmer for 5 minutes, or until the pot is steaming.
